Any of our three. The Medium green tomatillo has the acidity to cut the guacamole, and the Hot red brings heat that the avocado softens on the way down. Mild red if you want the vegetables to lead.

Can I make it vegan?
Order it without the cheese. Everything else in it — guacamole, onion, tomato, salsa — is already vegan.
Is this a good option if I'm not vegetarian?
Plenty of our regulars order it alongside a meat taco. It isn't built as a substitute for anything, so it holds its own next to the rest of the menu.
Can I get extra guacamole?
Always. Add it to the taco or get it on the side.
